Eucalyptus flowers when there’s little else in bloom in the countryside. The bees work it in the summer heat and turn it into a honey the colour of dark caramel.
The flavour is bold and slightly bitter, with a scent of liquorice and balsamic herbs. If you like your honey sweet and mild, try it first in the gift box of three small jars.
How to use it. With pecorino or caciocavallo cheese, in a mug of hot milk in winter, or straight from the spoon.
