Wildflower honey says the most about where our hives stand: the flowers change from week to week and the honey changes with them. Every harvest has a slightly different colour and scent.
We extract it cold, let it settle and jar it without pasteurising. When the weather turns cool it tends to crystallise: that’s a sign of real honey. If you prefer it runny, warm the jar in a bain-marie below 40 °C.
How to use it. On bread with ricotta, stirred into yoghurt, or to sweeten a herbal tea once it has cooled a little.
