Zagara is what Sicilians call the blossom of orange and lemon trees. It flowers in spring for just a few weeks, and the bees go for it as soon as it opens: the jar smells of citrus the moment you open it.
It’s a light, delicate honey. Over the months it crystallises into a fine white cream. That isn’t a fault: it happens to almost all unpasteurised honey.
How to use it. In tea, on fresh ricotta, with soft young cheeses or on a slice of bread and butter.
